Vegetarian Pot Pie

Yum. I didn't take pictures, it was eaten too fast!
It's a dreary, cold and rainy day here in Atlanta, GA. I took a nap and laid around. Xavier fell asleep in the car on the way to Kroger and I had to carry him, asleep, in my arms as I shopped. My back is killing me now, so I ended up resting my back instead of running. :) Sometimes you just need to be a bum!

Per Jons' request, I made a Veggie chicken pot pie for dinner.

I'm sure this can easily be veganized. Next time for sure.
Preheat oven to 350
2 ready made pie crusts, thawed
1 package Morningstar Farms Chik'n strips
1 can cream of potato soup
Soymilk, about 1/2 can's worth
1 package frozen peas and carrots, cooked in the microwave.

Cook chickn in a large skillet, add soup and enough milk to dissolve the soup. Add cooked peas and carrots, pepper and Mrs.Dash. I let it simmer for about 10 minutes.
Pour mixture in pie crust, top with the other crust. I pressed the sides together with a fork and cut 1" slits in the top, about 4 of them. Bake for about 25-30 minutes, until sides are golden brown.
Jons' reply was "If you want to make this 5 nights a week that would be great" :)

I'm reading "Skinny Bitch" right now. The guilt I feel when drinking my one diet soda a day is killing me. I do like the information and the way the book is written. It's exactly what I want to say to some of my clients!

I've made 3 hideous Christmas scarves for my Jingle joggers so far. They are super long, and once I add the jingle bells and garland- they'll be whitetrasheriffic! I want to finish 10 by this weekend. I have a crazy long day tomorrow- Boot camps 5:30, 6:45, a client at 8, IEP for Xan @ 9, 2 clients @ 10 and weight training for myself at 11. Then bank, home to relieve the sitter, cook up some dinner, do homework with Xan, laundry, back to work @ 5 for bootcamp, clients 6-7:15 and boot camp @ 7:15-8:15. Luckily Tuesdays are easier for me!
