Vegan Pumpkin Muffins

From Vegfamily.com:


1 3/4c flour


1 1/4 c sugar


1 tbsp baking powder


1/4 tsp salt


1 tsp cinnamon


1.5 tsp pumpkin pie spice (I didn't have ginger, allspice or nutmeg)


1/8 tsp ground cloves


1 c canned pumpkin


1 tbsp tofu ( calls for soy yogurt, didn't have it)


1/2 c soymilk


1/2 c oil (I should have tried halfing this with applesauce)


2 tbsp molasses. (Funny joke to follow about Molasses)


~ 1/4 c vegan chocolate chips.
350, 15-20.


Sift dry, mix wet and sugar. Add dry to wet, spray muffin pan. Makes 12.



Here's my joke:

There where 3 moles, a papa mole, a mama mole, and a baby mole. They all lived on a farm. One morning the papa mole stuck his head out of the mole hole and said, Ooh i smell bacon" The mama mole wanted to smell it too, so she stuck her head out of the mole hole. "ooh, i smell eggs!" Baby mole wanted to smell this too, but there wasn't enough room for his head too fit out of the hole. "all i smell is mole-asses"
