

Football season is over and our Friday evenings are free again. We love Fridays around here- Rita's for ice cream (see pictures!) as soon as Xan gets off the bus, friends over to play video games or outside, pizza, beer (well for Jon and I) and relaxing with the family. Nothing ends the week better.
I've been doing a lot of cooking lately, and I love it. The years I spent eating clean I never experimented with casseroles or the like. Last weekend I made sweet potato pierogis (yum yum yum) and apple pie. Yesterday I made some (veg) chicken bake with cornbread stuffing on top. Jon inhaled it- an entire 9X13 pan minus one small bowl for myself. Tonight I'm making a double batch of broccoli, rice and cheese casserole for Xavier's school feast and dinner tonight. I'm also going to decorate 24 turkey cupcakes. I love, love love it.
I still think about the restrictions of competing and shudder. Isn't that amazing? I see pics of friends who are competing still or read about somebody getting into and think "No thanks!" Not that I'd discourage them- it was a great while it lasted. Lots and lots of hard work and dedication to be proud of. I'm so enjoying my life after competing. :)
