A vegan for real, though

Yesterday I made cupcakes for the boys. Just a Duncan Hines yellow cake mix with fudgie frosting. Nothing homemade. The recipe calls for 3 eggs.

Oh Lawd. Vegans don't do eggs.

But...it's cake. And I like cake. And it's fudgie frosting, who doesn't like that. The mix is vegan. The frosting is vegan. What to do...what to do...Veganize it and risk it tasting like dry ass? No. I make it according o the recipe.

I eat one cupcake.

I feel like absolute dog shit. Not physically, mentally. Close my eyes, see battery chickens (although my eggs were cage free...cage free eggs are horribly mistreated too) and I am ashamed. That happened yesterday and I still feel awful. Over a dozen cupcakes sitting in my fridge uneaten? Unheard of in this house.

I guess that answers my question about how long this will stick. Baked goods have ZERO chance around me. I don't even consider it 'food' because of the eggs.
Even my red WINE is vegan! (YellowTail Shiraz for you nosey folks)

Hey, stumbled across your site. I'm not sure where you live, but if you had access to a local farm with free range chickens, would those eggs be ok? We raised a handful of chickens for a few years and they were the most spoiled things. They came and went as they pleased and ate as much as they wanted.

I've often said I'd eat eggs from my own chickens. I think do whatever works for you!
